Smitty's entrance is through a brown smoke-stained corridor into the pit , where the eat from the smokers was intense. Again brisket , sausage, onion , cheddar and pickle, with white bread. Smitty's do not have sauce either just some hot sauce which was necessary for the sausage at least. Brisket was tender and flavourful, good smoke ring and firm. Sausage was overly greasy , seemed badly packed in the casing , watching pork fat pour onto the butchers paper was not deal, and the sausage meat was not as spiced or tasty as Luling City Market. Is this a case of resting on laurels , who can tell? Though the brisket was redemption enough as was the unpretentious eating room. It was also awesome to see the big bald manager, previously only seen on TV and the internet looking pensive and alone in the meat prep room, maybe wondering how to improve the sausage.
