Houston is hot tonight. Virgie's was an excellent introduction to the meaty joys of the Lone Star State. The brisket was fall apart tender, wonderful smoke ring, deep pink, with the oak and pecan wood flavour coming through. On the white bread with raw onion and a splash of sauce this was superb. The ribs , also excellent, tender, smokey, juicy and again a great pink smoke ring. Sausage had a great texture , was not overly greasy. All were delicious with or without the sauce which had a sweet honeylike beginning with a vinegary aspect coming into play cutting through the sweetness. Potato salad was the mashed sort and nicely spicy. Green beans were flavourful, baked beans were not too sweet which was a good change from the molasses dependency that seems to be predominate. Cole slaw was maybe a little too mayonnaisey but still good for cleansing the palate between meats , and hey, it is only a side after all.
The dinners are only $9.49 for two meats and two sides, which is a great change from what in comparison in Memphis is overpriced and perhaps overrated.
Adrian the owner is a great and generous host. This place deserves to be recognised as a highlight of Texas BBQ. Indeed of American BBQ. And any place with a pig in a bib can't be bad can it?
