City Market- Luling, TX

Luling City Market was the first stop on a small town Texas meat fest, in what is reportedly the region that has some of the best BBQ in Texas. Thankfully breakfast in Houston was coffee only meaning hunger was high and stomachs began the day hollow as we tuned on the interstate and arrived in Luling.  The meat cutting/smoke room promised great things and indeed they were delivered. We got so excited about the brisket that we realized we didn't take a picture.  The photo shows scraps of brisket.  It was delicious indeed.  It was extremely tender, but didn't fall apart like other brisket and the flavor of the smoke, seasoning and fat was present throughout.  That said, the sausage was even better- the best we've eaten in Texas to date.  Nice and firm, great texture, smokey flavor, nice bite and not too greasy. All the BBQ establishments we visited on this day served their food on butcher paper with white sandwich bread, sliced onion, and pickles.  No Sauce. No plates. No fuss.
